Step:

  1. In a large bowl, beat the eggs

  2. Whisk in the pumpkin, coconut milk, and vanilla extract until combined

  3. Add sugar, salt, cinnamon, and pumpkin pie spice and mix until completely combined.

  4. Preheat the oven to 350 degrees F

  5. Bake for 50 to 60 minutes, or until a knife inserted comes out clean

  6. Allow yo cool for 2 hours and pie will firm

  8. 1 can (15 oz) pumpkin puree
  9. 1 cup full fat coconut milk
  10. 1 tsp vanilla extract
  11. 3/4 cup light brown sugar
  12. 1/2 tsp sea salt
  13. 1 tsp cinnamon
  14. 1.5 tsp pumpkin pie spice
  15. Pre-made pie crust of your choice
