Preparations: Cut fresh pineapple into chunks. Grease a 6 inch pie plate with butter. Preheat oven to 180C (360F).
Mix granulated sugar, coconut milk and egg together.
Stir in sifted flour and mix well
Place the pineapple in the pie plate and pour the mixture over top.
Bake for about 30 minutes.
Dust with confectioner's sugar.
Don't forget the vanilla ice cream!
