Cut pork into cubes, getting as much as the fat off the pork as possible. Fry the pork cubes until browned.
Chop the onion and crush the garlic then add to the pork in the frying pan
Peel and chop the tomatoes and add to the frying pan then season with salt and add the bay-leaf
Cook over a low heat until the pork is tender and the sauce has thickened (this usually takes approx. 25 - 30 mins).
