Step:

  1. Heat oil in a large pot over medium heat. Add cumin, ajwain and mustard seeds. Cook 2 mins.

  2. Add onions, tomatoes, curry leaves, ginger garlic turmeric paste and cook 5 minutes.

  3. In a bowl mix yogurt, besan and water. Use a whisk. Make sure there are no lumps. Add this to the pot. Add salt. Bring it to a boil and reduce heat to simmer. Cook to desired thickness. Don't let it boil over. Don't cover. You may leave a wooden spoon in the pot.

  1. 1/4 cup Vegetable Oil
  2. 1 tsp Ajwain seeds
  3. 1 tsp Cumin seeds
  4. 1/2 tsp Mustard seeds
  5. 4 Whole hot red chillies
  6. 1 Tbsp Ginger, Garlic, Turmeric Paste
  7. a few Curry leaves
  8. 1 Medium onion, fine chopped
  9. 2 tomatoes, fine chopped
  10. 1 tsp Garam Masala
  11. 1 cup Yogurt
  12. 1/2 Cup Besan (Chickpea Flour)
  13. 1 tsp Salt
  14. 3 cups Water
