Step:

  1. Combine olives, thyme, rosemary, lemon juice, lemon zest, garlic, oil and pepper in a medium bowl and mix well.

  2. Cover and refrigerate for 1 to 2 days, stirring several times.

  3. Serve with pita or other flatbread or French or Italian bread.

  3. 6 sprigs fresh rosemary
  4. 2 tbsp lemon juice
  5. 1 zest of half a lemon
  6. 4 clove garlic slivered
  7. 1/4 cup extra virgin olive oil
  8. 1 freshly ground pepper to taste
