Step:

  1. In a large skillet over medium heat, brown beef with onion, green pepper, 1/2 teaspoon salt (I use less salt in this recipe) and pepper.

  2. Remove meat mixture from skillet and drain fat. Reduce heat to low.

  3. Melt butter; spread potatoes over butter and sprinkle with remaining salt. Top with beef mixture.

  4. Combine eggs and milk; pour over all.

  5. Cook covered until potatoes are tender, about 30 minutes.

  6. Top with cheese; cover and heat until cheese is melted, about 5 minutes.

  7. Cut into wedges or squares to serve.


Ingredients

  1. 1 lb ground beef
  2. 1/2 medium onion, chopped
  3. 1/2 green pepper, diced
  4. 1 1 1/2 tsp salt, divided
  5. 1/2 tsp pepper
  6. 2 tbsp butter
  7. 6 medium potatos, peeled and finely shredded
  8. 3 eggs, beaten
  9. 1/3 cup milk
  10. 2 cup (8 ounces) shredded cheddar or mozzarella cheese (I use more cause I'm a cheesehead)
