Step:

  1. Pour the milk and juice in a small pan and heat until almost simmering

  2. Add the couscous then after 1 minute take off the heat, stir in the vanilla, cover and let sit for 6 minutes

  3. Add your diced fruit (I like apple and grapes, pineapple and papaya, my kids like pear and strawberries), stir in and cover again for another 3 minutes

  4. Fluff couscous gently with a fork and serve


Ingredients

  1. 240 ml coconut milk
  2. 120 ml pineapple juice
  3. 120 ml orange juice
  4. 1/2 tsp vanilla extract
  5. 2 tbsp maple syrup or agave nectar
  6. diced fruit of your choice
  7. 200 grams corn / maize couscous
