Step:

  1. Preheat the oven to gas 4 / 180C / 350°F and grease a 6"x 8" ovenproof dish

  2. Combine the cookie crumbs, butter and sugar for the base layer together and press into the bottom of the greased dish. I have a lot of gluten-free cookie recipes you can use if you need to, just have a search through my profile

  3. Sprinkle the chocolate chips on top and bake for 5 minutes until the chocolate has melted, then spread it over the top of the base with the back of a spoon

  4. Whisk together the flour, sugar and baking powder then beat in the milk, oil and vanilla until smooth

  5. Fold in the coconut, chopped walnuts and chocolate chips

  6. Pour the batter over the base and return to the oven to bake for 35 - 40 minutes or until a toothpick tests clean

  7. Serve straight out of the oven with ice cream, chocolate sauce and caramel sauce

  2. 225 grams cookies made into crumbs - digestives, graham crackers etc
  3. 4 tbsp sunflower spread / butter, melted
  4. 3 tbsp granulated sugar
  5. 60 grams chocolate chips - I use Moo-Free brand, Enjoy Life brand or Eat Allergy Safe brand
  6. Cookie Layer
  7. 120 grams gluten-free / plain flour
  8. 50 grams granulated sugar
  9. 1 tsp baking powder
  10. 160 ml coconut milk
  11. 2 tbsp olive oil
  12. 2 tsp vanilla extract
  13. 60 grams chocolate chips
  14. 25 grams desiccated / shredded coconut (optional)
  15. 30 grams finely chopped walnuts (optional)
