Step:

  1. Mix your salsa and refrigerate at least 1 hour.

  2. Mash the beans with the garlic.

  3. Mix the cheeses.

  4. Place 1/4 of beans on half tortilla, top with 1/4 of cheese mix. Spread to edge, fold over. Repeat.

  5. Place filled tortillas on greased cookie sheet. Bake at 350 for approx. 25 minutes or until slightly browned.

  6. Serve with salsa.


Ingredients

  1. 4 large Flour Tortillas
  2. 1 can Black Beans, drained but not rinsed
  3. 2 large cloves Garlic, chopped
  4. 16 oz. Ricotta Cheese
  5. 1/3 cup grated Parmesan Cheese
  6. For the Salsa
  7. 2 large ripe Tomatoes, diced
  8. 1 med. Sweet Onion diced
  9. 1 large clove Garlic, chopped fine
  10. 2 Jalapeo peppers, minced
  11. 1 tsp. dried Cilantro
  12. 1 tsp. dried Oregano
  13. 1 pinch Salt
  14. 1 tbs. Lemon juice
