cook rice according to package directions. set aside.
heat oil and fry nuggets until fully cooked. set aside on paper towel to drain excess grease..
in a saucepan(for the sweet n sour sauce) place water, pineapple juice, vinegar and sugar. heat and stir until sugar is dissolved. add rest of sauce ingredients and heat until simmer.
add pineapple and carrots to sauce. continue to simmer until fully heated. ( if u want to add other veggies do this now.. raw veggies with have to be sauteed or blanched until tender first)
in a small cup mix corn starch and water. pour into sweet n sour sauce to thicken.
stir continuously until thickened and heated through.
place rice on a plate. arange 5 nuggets on top of the rice. then pour 1/3 of sauce all over..
serve and enjoy..
