Step:

  1. Melt the butter in a medium kettle.

  2. Add the flour and onion, and saute' over medium heat until the onions begin to get soft. Do NOT brown them.

  3. Gradually add the milk, then the salt and pepper.

  4. Heat thoroughly over medium heat stirring constantly (don't let the milk curdle), until slightly thickened.

  5. Add the bacon, pimiento, and cheese.

  6. Stir until the cheese melts.

  7. Do not boil.

  8. Heat slowly.

  9. Pour into bowls and serve.


Ingredients

  1. 2 tbsp butter
  2. 1 tbsp flour
  3. 1 tbsp chopped onion
  4. 1 quart milk
  5. 1/4 to 1/2 teaspoon salt
  6. 1/4 tsp pepper
  7. 1 tsp chopped pimiento
  8. 2 slice bacon, friend crisp and crumbled
  9. 1/4 lb Wisconsin American cheese, cut up
