Roughly chop the onion, carrot, courgette and red pepper into chunks and put into a food processor with the cauliflower florets, garlic and ginger, pulsing until finely chopped (but not pureed)
Put the mixture into a saucepan with the cumin and turmeric and stir to coat
Add the stock and sweetcorn and bring to a simmer. Let cook until the stock has all been sucked up by the cauliflower, around 15 minutes
Season well with pepper and some salt and serve immediately

1 carrot
1 courgette
1 red bell pepper
450 grams cauliflower florets
2 cloves garlic
1 cm length of peeled ginger
80 grams sweetcorn
1/2 tsp ground cumin
1/2 tsp turmeric
300 mls strong vegetable stock
salt and freshly ground black pepper
