Step:

  1. Roughly chop the onion, carrot, courgette and red pepper into chunks and put into a food processor with the cauliflower florets, garlic and ginger, pulsing until finely chopped (but not pureed)

  2. Put the mixture into a saucepan with the cumin and turmeric and stir to coat

  3. Add the stock and sweetcorn and bring to a simmer. Let cook until the stock has all been sucked up by the cauliflower, around 15 minutes

  4. Season well with pepper and some salt and serve immediately

  1. 1 onion
  2. 1 carrot
  3. 1 courgette
  4. 1 red bell pepper
  5. 450 grams cauliflower florets
  6. 2 cloves garlic
  7. 1 cm length of peeled ginger
  8. 80 grams sweetcorn
  9. 1/2 tsp ground cumin
  10. 1/2 tsp turmeric
  11. 300 mls strong vegetable stock
  12. salt and freshly ground black pepper
