  2. Stir until the sugar has dissolved and the mixture begins to simmer

  3. Add the bananas and nuts and cook for 2 minutes, coating the bananas in the sauce until they soften

Ingredients

  1. 60 g butter / sunflower spread (1/4 cup)
  2. 140 g brown sugar (3/4 cup)
  3. 4 tbsp rum or the equivalent in rum extract
  4. 1 tbsp vanilla extract
  5. 1/2 tsp ground cinnamon
  6. 4 bananas, peeled and halved lengthwise, then cut in half widthwise
  7. 1 handful chopped walnuts or pecans (optional)
  8. ice cream to serve
